Mango Frozen Yogurt

I was hoping today was going to be a beautiful day, just like yesterday. True, the weather report said it would be cloudy, but I tend to be skeptical of those! Well, it turns out they were right…
We did squeeze a dog park visit, as we are trying to show Lola lots of attention before baby madness starts in August, but we devoted the rest of the day to cleaning the fridge and freezer. That’s when I realized I have a frozen mango obsession as there were FOUR bags in my freezer!
Oh, what to do with so many mangoes? Mango Frozen Yogurt, of course!
The beauty of using frozen mangoes is that you can make this Mango Frozen Yogurt all year long. They scream summer and sunshine, but if you’re anything like me, your ice cream/froyo cravings are not tied to any season.
Another advantage is that you get to serve it right away, if you’re into soft serve. I usually like it to let it set in the fridge for at least 6 hours, but Tim and I couldn’t resist having a little right out of the food processor and it was fantastic!
Once we got back from the park, our Mango Frozen Yogurt was ready and waiting for us. Oh what a great healthy treat! It definitely made up for the lack of sunshine.
I used honey for a touch of sweetness, but I’m planning on making this again using splenda so I can have it as often as I want in my sugar free/low carb diet.
As for the yogurt, my choice was plain Greek yogurt made with Real California Milk.

Are these ratios correct? 1/2 cup of yogurt sounds like a very small amount of frozen yogurt…?
Oh my, made this just now from fresh frozen mangoes off a neighbors tree. I just had a sandwich bag full cut and frozen and 1/2 cup nonfat Greek yogurt. Put in food processor, blended, added a drip of Trader Joe’s organic liquid stevia.
Delicious! Â Just like soft serve ice cream.Â
I did blend them last week with 2 frozen bananas, came out like an Icee. Too much banana taste for me, not a fan, husband liked though.
