Christmas Mimosa is the perfect Christmas brunch cocktail! Made with cranberry juice and rosemary, it is not only delicious but also beautiful and festive. A great way to celebrate the holiday season!
Christmas Mimosa:
- 2 ounces (about ¼ cup) cranberry juice, cold
- 1 tablespoon orange liqueur (such as Grand Marnier), cold
- 1 tablespoon simple syrup, cold (optional)
- 2 ounces (about ¼ cup) chilled sparkling wine
- Rosemary sprigs to garnish
- Sugared cranberries to garnish
Sugared cranberries (makes enough for several mimosas):
- 2 cups granulated sugar, divided
- 1 cup water
- 1 cup fresh cranberries
Make the sugared cranberries:
Combine 1 cup sugar and the water in a saucepan. Simmer over medium heat, stirring, until the sugar has dissolved.
Stir the cranberries and stir so they are all evenly coated.
Remove the cranberries with a slotted spoon and place on a parchment paper lined baking sheet, making sure they are not sticking together. Let it dry for one hour.
Roll the cranberries in the remaining sugar, until they are all coated. Let them dry again for another hour. You can make them up to 3 days ahead.
Make the Christmas Mimosa:
Combine the cranberry juice, orange liqueur and simple syrup (if using) in a tall champagne flute.
Add the rosemary sprig.
Pour the champagne and give it a gentle stir.
Garnish with the sugared cranberries and serve!
Making Christmas mimosas for a crowd:
If you want to use a whole bottle of champagne to make mimosas, here are the ingredients:
- 25 ounces (about 3 1/4 cups) cranberry juice
- 3/4 cup orange liqueur
- 3/4 cup simple syrup (optional)
- 1 bottle (750 ml) chilled sparkling wine
- Rosemary sprigs to garnish
- Sugared cranberries to garnish
This will yield about 12 mimosas. You can make them individually or make a big pitcher or punch bowl.
Make ahead:
You can make the sugared cranberries up to 3 days ahead and keep in an airtight container in the fridge.
You can also premix the juice, liqueur and simple syrup (if using) and keep refrigerated overnight.
