Batida de Coco

What better way to send off summer than with this sweet and refreshing Batida de Coco? Just a handful of ingredients and a blender are all you’ll need to prepare this classic Brazilian beach cocktail!

Ingredients  

  • 1 can, 13.5 fl ounces full fat coconut milk
  • 1 cup shredded coconut, plus more for rimming the glasses
  • 1 can, 14 ounces sweet condensed milk
  • 6 ounces cachaca or vodka, or to taste
  • 3 cups ice

Instructions 

  • If using packaged shredded coconut, start by combining the coconut milk and shredded coconut in a bowl. Let it rest for 5 to 10 minutes to soften. If using fresh, this step is not necessary.
  • Combine all the ingredients in the jar of a blender and blend until creamy and smooth.
  • Brush the inside and outside rims of 4 glasses with a little coconut milk or water. Dip the rim of each glass in shredded coconut to coat.
  • Divide the batida into the 4 rimmed glasses.
  • Serve immediately.

Notes

You can prepare this cocktail up to one day ahead and keep it in the fridge. About 30 minutes before serving, pop it in the freezer until it is thickened to a milkshake consistency. When ready to serve, blend again until back to a frozen drink consistency.
