Creamy One Pot Pasta with Spicy Sausage

This Creamy One Pot Pasta with Spicy Sausage is an easy weeknight dinner made with fettuccine cooked right in a rich tomato cream sauce with spicy Italian sausage, Parmesan cheese, and fresh basil. Cozy, flavorful, and made in just one pan for easy cleanup!

Ingredients  

  • 1 tablespoon olive oil
  • 1 pound spicy Italian sausage, casings removed
  • 4 cloves of garlic, minced
  • 1 tablespoon tomato paste
  • 3 cups chicken broth
  • 2 cups heavy cream
  • 1 ½ cups tomato passata (or tomato sauce)
  • Salt and freshly ground pepper to taste
  • 1 pound dried fettuccine pasta
  • 1 sprig Fresh basil, plus more for garnishing
  • 1 cup Freshly grated parmesan cheese

Instructions 

  1. Heat the olive oil in a large deep skillet or braiser over medium-high heat. Add the sausage and cook, breaking it up into crumbles, until browned and cooked through.
  2. Stir in the garlic and tomato paste and cook for about 1 minute, stirring constantly, until fragrant and slightly darkened.
  3. Pour in the chicken broth, heavy cream, and tomato passata. Season with salt and pepper, then add the basil sprig and stir to combine.
  4. Add the dry fettuccine to the pan and bring everything to a gentle boil.
  5. Reduce the heat to a simmer and partially cover the pan. Cook for 15–20 minutes, stirring often, until the pasta is tender and the sauce has thickened. If the sauce reduces too quickly before the pasta is fully cooked, add a splash of broth as needed.
  6. Remove the basil sprig and stir in the Parmesan cheese until melted and creamy.
  7. Serve immediately topped with fresh basil and extra Parmesan, if desired.

Notes

  • Depending on your stove, pan, and pasta brand, the pasta may take anywhere from 15–20 minutes to become fully tender.
  • Stir the pasta often while it cooks to prevent sticking and help create a smooth, creamy sauce.
  • If the sauce reduces too quickly before the pasta is cooked, add an extra splash of broth as needed.
  • Freshly grated Parmesan melts much more smoothly than pre-shredded cheese.
  • Tomato passata creates a smoother sauce, but your favorite marinara sauce works great too. I love Rao’s!
  • Leftovers will thicken considerably in the fridge. Reheat gently with a splash of broth, milk, or cream to loosen the sauce.
  • This recipe is best served fresh, as creamy pasta tends to soften and lose some of its “aldenteness” over time. 😅
