Turkey Breast with Apricot Sauce

Ingredients  

  • 1 boneless turkey breast
  • 1/2 cup butter
  • 1 Tbsp chopped rosemary
  • 1 Tbsp chopped basil
  • 4 slices of bacon, cut into 8 halves
  • 2 cups dry white wine
  • 1/3 cup apple cider vinegar
  • Salt and pepper

For the apricot sauce:

  • 1 1/2 cup apricot preserves
  • 1/2 cup apple cider vinegar
  • 1 cup turkey juices, if you don’t have enough, add chicken broth to make a cup

Instructions 

  • Pre heat your oven to 350 degrees.
  • In a bowl, combine the herbs and the butter and mix well until incorporated. Season with salt and pepper.
  • Rub the herbed butter all over the turkey and then lay the bacon slices on the turkey.
  • Put your turkey in a roasting pan along with the white wine and the vinegar. Baste once before putting in the oven.
  • Bring the turkey to the oven, covered in foil, for 1 hour. Baste the turkey every 15 minutes.
  • Take the foil and the bacon off and roast for 1 more hour or until the turkey has browned and is a nice golden color.
  • In a saucepan, combine all the sauce ingredients, whisking everything together until you have a smooth liquid. Bring it to a boil and let it cook until it reduces/thickens slightly.
  • Serve the sauce accompanying the turkey.
