Brazilian pao de queijo made in a mini muffin pan

Easy Pao de Queijo (Blender Version)

Ingredients  

  • 1 cup milk
  • 1/2 cup vegetable oil
  • 2 cups tapioca flour
  • 1 teaspoon salt, or to taste
  • 2 eggs
  • 1 cup freshly grated parmesan cheese

Instructions 

  • Preheat oven to 350 degrees F.
  • Combine all the ingredients in the jar of a blender and pulse until smooth. Pour the batter into two mini muffin tins (or one big tin), lightly greased or sprayed with cooking spray.
  • Bake for 15-20 minutes or until puffed and golden brown.
  • Let them cool slightly and serve warm.
