HOW TO MAKE
(Brazilian Cheese Bread)
Tapioca Flour Whole Milk Water Vegetable Oil Parmesan Cheese Mozzarella Cheese Eggs Salt
Combine milk, water, oil and salt in a saucepan, and heat until it begins to boil.
Heat the Milk
Add the tapioca flour to the bowl of your stand mixer. With the mixer running, slowly pour the hot liquid in the bowl.
Scald the tapioca
Add the eggs, one at a time. It will look like they won't mix in, but hang in there! Let the stand mixer work its magic.
Add the eggs
Shape the balls. (Read my post for tips!) Bake at 400ºF until puffed and golden brown, 15 to 20 minutes.
