As 2017 approaches its end, I’m feeling all kinds of emotions.
I’m excited for 2018 and everything the future will bring, but I’m just not ready to let 2017 go yet. This year was the best year of my life, because it brought me our wonderful little girl (that is now my whole world)!
It was also full of pain, tears and sleepless nights, but I wouldn’t change a thing. In fact, I’d happily relive it all again, trying to complain less and enjoy more every single second. Rebecca will never be that little again and that is so bittersweet!
Yes, I’m happy that she’s big and healthy and I’m so looking forward to all the milestones, like her first word, first crawl and first tooth. But I will always miss those first months! They went by as a lightning and feel like a blur because of the exhaustion.
So, yeah… 2017 made the list of years to remember. And an awesome year needs a good send off, so I’m celebrating with this delicious and refreshing Frozen Peach Bellini!

- 3 cups Dole Frozen Sliced Peaches
- 1/2 cup simple syrup, or to taste
- 1 bottle prosecco
- Peach slices to garnish

Hi Jennifer, simple syrup is a solution made of sugar and water. Since the sugar is already dissolved in the water, you don’t need to worry about it settling to the bottom of your cocktail. You can make it yourself (lots of recipes online) or you can buy it at the liquor store!
It’s essentially sugar water, you can buy it at any grocery or liquor store or you can Google how to make it at home fairly easy as well.
Oh Olivia …. I was all set to serve these among some other test recipes this past weekend. I was aghast because I had promised everyone ‘peach’ and I couldn’t find a frozen peach in a 10 mile radius! There must be a peach shipping problem in my area. Anyway, I purchased 29 oz. cans of canned, peach slices. Instead of simple sugar, we blended them with the fruit juice in which they were canned. My son used to bartend, and following his advice, we also added some Peach Schnapps to the mix. Everyone loved them! Thanks so much for the idea, and I’ll certainly be trying them again when I can find frozen. Cheers!
