As 2017 approaches its end, I’m feeling all kinds of emotions.
I’m excited for 2018 and everything the future will bring, but I’m just not ready to let 2017 go yet. This year was the best year of my life, because it brought me our wonderful little girl (that is now my whole world)!
It was also full of pain, tears and sleepless nights, but I wouldn’t change a thing. In fact, I’d happily relive it all again, trying to complain less and enjoy more every single second. Rebecca will never be that little again and that is so bittersweet!
Yes, I’m happy that she’s big and healthy and I’m so looking forward to all the milestones, like her first word, first crawl and first tooth. But I will always miss those first months! They went by as a lightning and feel like a blur because of the exhaustion.
So, yeah… 2017 made the list of years to remember. And an awesome year needs a good send off, so I’m celebrating with this delicious and refreshing Frozen Peach Bellini!

It’s a celebration more than a century old, a festival of flowers, music and sports unequaled anywhere else in the world. It’s a greeting to the world on the first day of the year and a salute to the community spirit and love of pageantry that have thrived in Pasadena for more than 100 years.
2018’s theme is “Making a Difference”, celebrating acts of kindness that enrich the lives of others and are a source of hope and inspiration for everyone.
My favorite frozen peach brand, Dole, is participating for its 8th year in the parade. This year’s float – “Sharing Nature’s Bounty” – celebrates their passion for improving communities, the environment and its commitment to sustainability.
It is no secret that Dole strives to provide healthy food products that are accessible to all, year-round throughout the country. I’m excited to see their float and how they’ve incorporated this year’s theme into it!

- 3 cups Dole Frozen Sliced Peaches
- ½ cup simple syrup, or to taste
- 1 bottle prosecco
- Peach slices to garnish
- Combine frozen peach and simple syrup in the jar of a blender. Blend until pureed, adding a few tablespoons of water if necessary.
- Fill champagne flutes ⅓ of the way with the peach puree. Top with prosecco, mixing with a spoon to throughly combine.
- Garnish with the peach slices and serve immediately.
